FREE EXCERPTS  (RON'S NOTE: JUST A TEASE! LOL)

I woke up early this morning, hearing the rain once again. As I lay on my pillow trying to go back to sleep, I couldn't help but think about the olden days when I was first married and then in about 4 years I had my first little one, Anita.

I thought about that old house we bought when she was a baby and how dreary the young women of today would think it was.

We had just 3 large rooms and a "path." In case you are wondering what that is, back in those days we called it the "toilet." I wasn't too happy to have to go outside but I had it so much better than many of our neighbors. Mel ran an electric light out to ours and I could turn it on before I left the house. And believe you me, I thought that was wonderful.

We paid just $2,500.00 for the old house and our house payments were $28.00 a month. Yes, I said $28.00. And to all you younger women out there; I was as happy as a bug in a rug. Mel had a job at American Enka and made a whole $1.40 an hour. We didn't really know we were poor. We had no credit cards or anything like that and if we bought anything we had to have the money to pay for it up front.

I made a real home out of that little house. I painted the outside myself. The walls were very high but I climbed up on the ladder and painted every inch of that little house. Then we added on 2 additional rooms.

The old house is still there (some 50 years later) and was exactly the same until last year when Mountain Projects rebuilt every inch of it and put in a well, a Heat pump and a new bathroom (inside of course). You know something? I didn't know any better. I thought I was rich. I had my Mel and my beautiful little girl (who started playing the piano in that very house at the age of 3 years old) and then I had my beautiful little boy David. We had our church and so many friends there that I thought we had a wonderful life.

Folks, it's not what you have to show the world that you have accumulated, it's what you do with what you do have. We don't start out on top but we work up to the top. I was so blessed. I had a clean, warm home to live in. I had beautiful babies, and I had food on the table. The preacher often came for Sunday dinner and there were always other folks coming by to sing or just to visit. Such a rich life we had. I can't remember ever saying "I'm bored" or I'm depressed. We simply took what we had and lived our lives to the fullest.

So, you see, I have always been blessed in so many ways. Take whatever you have and make the most of it and you will realize that if you have the Lord, He will rain showers of blessings upon you. You won't need anything else.

Blessings to all  Ila Chandler Knight

The following recipes give just a tiny glimpse into the Great Smoky Mountain recipes waiting inside.
These are just the tip of the iceberg,

The rest of the recipe is on page 97,
and you still have plenty of time to make it
before Christmas.

I really don't like store bought Fruitcakes,
but Ila's has made a believer out of my tastebuds,
and I know it will tickle yours as well.

It's rich beyond belief.

Ron's note:
As the recipient of too many jars to remember,
this is what we call soup mix here in the Smokies.

Ila's recipe is as good as my Mom's.
The rest of the recipe is on page 45.
(Almost! lol) - Just teasing

Ron's Note:
Having traveled the U S A for over 50 years,
we have eaten about every style of chicken and dumplings you might imagine.

Ila's recipe here is true to the soft pillow style that we Western North Carolinians revere as America's best.

One bite and you'll never want any other.

By the way, this is just the recipe for the dumplings, the broth instructions are on page 30!.
